  • 4 pieces Moo Shu Pancakes/Flour Tortillas Lettuce leaves are a great low-carb alternative.

Method
 

Step-by-Step Instructions
  1. Slice the chicken breast into thin strips. In a bowl, combine the chicken with soy sauce and cornstarch. Marinate for 10 minutes.
  2. Heat oil in a large skillet over medium-high heat for 1-2 minutes until shimmering.
  3. Add chicken strips to the hot skillet and stir-fry for 5-7 minutes until cooked through and golden brown.
  4. Add minced garlic and stir. Cook for an additional 1-2 minutes until aromatic.
  5. Add shredded cabbage, carrots, and mushrooms. Stir-fry for 2-3 minutes until crisp-tender.
  6. Pour hoisin sauce over the mixture and stir well. Heat for another minute.
  7. Wrap moo shu pancakes or tortillas in foil and heat in a 350°F (175°C) oven for 5-7 minutes.
  8. Assemble by placing chicken and vegetable filling in the center of a warm pancake or tortilla and fold.
