  • 1 pound ground beef or plant-based crumbles for vegetarian option
  • 1 packet taco seasoning homemade or lower sodium mix
For the Veggies
  • 4 cups green cabbage or coleslaw mix for convenience
  • 1 cup diced tomatoes fresh or canned
  • 1 cup black beans or pinto beans
  • 1 cup corn canned or frozen
For the Crunch & Creaminess
  • 2 cups Fritos corn chips or chili cheese Fritos
  • 1.5 cups shredded cheddar cheese dairy-free option for vegan
  • 1 cup ranch dressing or Southwest dressing; Greek yogurt as lighter option

Method
 

Directions
  1. In a large skillet over medium heat, add ground beef and cook for 6-8 minutes until browned. Drain excess fat and set aside.
  2. Return skillet to heat, add taco seasoning and a splash of water. Stir and simmer for 2-3 minutes until thickened.
  3. Chop cabbage and dice tomatoes. Rinse black beans and corn.
  4. Layer chopped cabbage, beef, black beans, corn, and tomatoes in a serving bowl, tossing gently to combine.
  5. Sprinkle Fritos corn chips over the layered ingredients.
  6. Top with shredded cheddar cheese and drizzle with ranch or Southwest dressing before serving.
