- Pat the skirt steak dry with paper towels. Season both sides with salt and black pepper.
- Heat a cast-iron skillet over high heat for 3-5 minutes. Add oil and place the steak in the skillet. Sear for 2-3 minutes on each side.
- Lower the heat to medium, add butter, let it melt and bubble for about a minute. Then add minced garlic, stirring frequently for 1-2 minutes.
- Once rested, slice the steak against the grain into thin strips. Drizzle garlic butter over the steak and sprinkle with fresh parsley. Serve hot.
