  1. Preheat your oven to 425°F (220°C) to achieve a beautifully caramelized exterior.
  2. In a mixing bowl, combine the chicken thighs with olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and dry oregano.
  3. Once marinated, arrange your chicken thighs onto a Vertical Gyro Spit Plate.
  4. If you don't have a Vertical Gyro Oven Plate, use a halved onion with wooden skewers through the chicken.
  5. Carefully place the gyro assembly into the preheated oven and add water or stock to the base.
  6. Cover the top of your chicken with aluminum foil and bake for about 75–90 minutes.
  7. After removing the gyros from the oven, allow the chicken to rest for a few minutes.
