  • 1/2 cup Sun-Dried Tomatoes Choose oil-packed or rehydrated
  • 1 tsp Italian Seasoning Customize as desired

  • 2 cups Baby Spinach Nutritious and colorful
For Cooking
  • 2 tbsp Olive Oil Used for cooking

Method
 

Cooking Instructions
  1. Heat the skillet by warming 2 tablespoons of olive oil in a large skillet over medium-low heat for about 2 minutes.
  2. Carefully add the sea scallops to the skillet, ensuring they are not overcrowded. Sear each side for 2-3 minutes until golden-brown. Remove from skillet.
  3. In the same skillet, add the minced garlic, stirring for about 30 seconds until fragrant.
  4. Stir in 1 cup of heavy cream and increase the heat slightly to bring it to a gentle simmer.
  5. Mix in the sun-dried tomatoes and Italian seasoning, simmer for another 2-3 minutes.
  6. Add the peeled shrimp and baby spinach to the skillet, cooking until shrimp are pink and spinach wilts down, about 3-4 minutes.
  7. Return the seared scallops to the skillet, sprinkle with grated Parmesan cheese and stir gently to combine.
  8. Serve the dish hot, garnished with additional Parmesan if desired.
