Ingredients
  

For the Marinade
  • 80 ml low-sodium light soy sauce for gluten-free use tamari
  • 0.5 tbsp gochujang substitute with sriracha or spicy chili paste if necessary
  • 1 tbsp mirin can be replaced with sweet sherry
  • 2 tsp minced ginger fresh ginger is ideal
  • 0.5 tsp garlic powder or 1 tsp of garlic paste
  • 1 tbsp sesame oil use pure sesame oil for authenticity
  • 1 tbsp neutral oil choose high smoking point oil
  • 4 tbsp light brown sugar coconut sugar can be a substitute
For the Beef
  • 1 lb flank or skirt steak slice thinly against the grain

Method
 

Preparation Steps
  1. In a large bowl, whisk together the marinade ingredients.
  2. Add the thinly sliced flank or skirt steak to the marinade and coat well. Cover and refrigerate for at least 2 hours.
  3. Preheat a wok over high heat until it starts to smoke.
  4. Remove half of the marinated beef, shake off excess marinade, and add to the hot wok. Cook for about 3 minutes without stirring.
  5. Stir the beef and cook for an additional 2-3 minutes until browned. Transfer to a warm bowl and repeat with the remaining beef.
  6. Sprinkle with sesame seeds, serve immediately with boiled rice and salad.

Notes
