Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add shrimp in a single layer, sprinkle with Cajun seasoning, and cook until pink and opaque, about 3-4 minutes.
  3. Reduce heat to medium-low, pour in heavy cream, and simmer for 2-3 minutes. Gradually mix in parmesan cheese until melted and smooth.
  4. Add the drained penne pasta to the skillet, toss gently for about 1 minute to coat in the sauce.
  5. Serve hot, garnished with extra parmesan and herbs if desired.
