Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare your baking dish by lightly greasing it with oil.
  2. In a large mixing bowl, combine the cooked shredded chicken, 1 cup of shredded cheese, sour cream, cumin, and garlic powder, and stir well.
  3. Warm corn or flour tortillas in a skillet over medium heat for about 30 seconds on each side to keep them pliable.
  4. Take a warm tortilla, spoon about 2 tablespoons of the chicken mixture into the center, and roll it tightly.
  5. Pour the green chile enchilada sauce over the rolled tortillas, sprinkle the remaining shredded cheese on top, and drizzle with olive oil.
