  • 2 pieces Chicken thighs or breasts
  • 1 cup Rice white, brown, or orzo
  • 3 cloves Garlic minced
  • 1 medium Lemon juiced
  • 1 teaspoon Oregano dried or fresh
For the Tzatziki Topping
  • 1 cup Greek Yogurt or plain yogurt
  • 1 medium Cucumber finely grated
  • 2 tablespoons Dill fresh or dried
For Drizzling
  • 2 tablespoons Olive Oil for added flavor
Optional Add-ins
  • 1 cup Bell Peppers or Zucchini, diced
  • 1/2 cup Olives or Sundried Tomatoes

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Layer the rice evenly in a large baking dish. Sprinkle minced garlic and oregano over the rice.
  3. Place chicken pieces on top of the rice and drizzle lemon juice over them.
  4. Pour in water or broth around the chicken. Cover the dish tightly with aluminum foil and bake for 35-40 minutes.
  5. Remove the dish, dollop tzatziki over the chicken, and bake uncovered for an additional 10-15 minutes.
  6. Allow to sit for a few minutes before serving. Drizzle with olive oil and sprinkle fresh herbs on top.
