Ingredients
  

For the Steak
  • 1 lb Sirloin Steak can substitute flank or skirt steak
  • 2 tbsp Olive Oil for marinade
  • 3 cloves Garlic minced
  • 3 tbsp Lemon Juice freshly squeezed
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
For the Bowl Base
  • 2 cups Cooked Grains brown rice, quinoa, or cauliflower rice
  • Roasted Chickpeas optional
For the Fresh Veggies
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 medium Red Onion sliced
  • 1/2 cup Kalamata Olives pitted
For the Toppings
  • 1/2 cup Feta Cheese optional
  • 1/4 cup Fresh Herbs parsley or dill
For the Tzatziki
  • 1 cup Greek Yogurt can substitute with coconut yogurt
  • 1/2 medium Cucumber grated
  • 2 cloves Garlic minced
  • 1 tbsp Dill chopped
For the Lemon Vinaigrette
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tbsp Honey
  • 1 clove Garlic minced
  • 1 tsp Dried Oregano

Marinating and Sauce Preparation
  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper to create the marinade. Coat the sirloin steak thoroughly and let it marinate at room temperature for 30 minutes or refrigerate for up to 4 hours.

  2. In a separate bowl, mix Greek yogurt, grated cucumber, additional minced garlic, and chopped dill. Stir until well combined and adjust seasoning with salt. Cover and chill the tzatziki sauce.

  3. In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, and dried oregano. Blend until smooth and cohesive.

Cooking the Steak
  1. Heat a large skillet over medium-high heat until hot. Add the marinated steak and sear for about 4-5 minutes on each side or until desired doneness is achieved.

  2. Remove the steak from heat and let it rest for several minutes before slicing.

Assembling the Bowl
  1. Start with a base layer of cooked grains in a bowl, add sliced steak, then halved cherry tomatoes, diced cucumber, sliced red onion, and optional roasted chickpeas.
