  • 1 medium Cucumber Grate and squeeze out extra moisture.
  • 1 cup Yogurt Dairy-free yogurt for vegan option.
  • 2 tablespoons Lemon Juice Freshly squeezed preferred.
  • 2 cloves Minced Garlic Use fresh for superior taste.
  • 1 tablespoon Chopped Herbs Optional for added freshness.
For Assembly
  • 12 Mini Pita Rounds Consider small naan or cucumber rounds for gluten-free options.

Instructions
  1. Combine the ground meat, breadcrumbs, chopped herbs, beaten egg, minced garlic, salt, and pepper in a mixing bowl. Mix until incorporated and shape into 12 small meatballs.
  2. Preheat the oven to 350°F (175°C) and arrange the meatballs on a baking sheet lined with parchment. Bake for 18 minutes until golden brown and cooked to an internal temperature of 160°F (71°C).
  3. Prepare the tzatziki by mixing grated cucumber, yogurt, lemon juice, minced garlic, and chopped herbs. Season with salt and let sit in the fridge for about 10 minutes.
  4. Assemble the mini Greek meatball bites by placing a meatball on each mini pita and topping with tzatziki. Serve immediately.

Notes
