- Combine the ground meat, breadcrumbs, chopped herbs, beaten egg, minced garlic, salt, and pepper in a mixing bowl. Mix until incorporated and shape into 12 small meatballs.
- Preheat the oven to 350°F (175°C) and arrange the meatballs on a baking sheet lined with parchment. Bake for 18 minutes until golden brown and cooked to an internal temperature of 160°F (71°C).
- Prepare the tzatziki by mixing grated cucumber, yogurt, lemon juice, minced garlic, and chopped herbs. Season with salt and let sit in the fridge for about 10 minutes.
- Assemble the mini Greek meatball bites by placing a meatball on each mini pita and topping with tzatziki. Serve immediately.
