Step‑by‑Step Instructions for Steak & Queso Rice
  1. Begin by prepping your ingredients for the Steak & Queso Rice. Dice one medium onion and one bell pepper into small pieces, then mince two cloves of garlic.
  2. In a large skillet, heat two tablespoons of olive oil over medium-high heat. Once the oil is shimmering, season your sirloin steak with salt and pepper, then carefully place it in the skillet. Sear the steak for 4–5 minutes on each side until it develops a rich brown crust. After cooking, transfer the steak to a plate and let it rest for about five minutes before slicing it against the grain.
  3. Using the same skillet with the flavorful drippings, add the diced onion and bell pepper. Sauté the vegetables over medium heat for 3–4 minutes, until they become soft and aromatic.
  4. Stir in your cooked long-grain white rice along with one teaspoon each of paprika, cumin, and chili powder. Season with salt and pepper to taste.
  5. Lower the heat to medium-low and gradually add your queso cheese to the rice mixture. Stir constantly for about 2–3 minutes until the cheese melts and creates a creamy sauce.
  6. Now it's time to incorporate the sliced steak back into the pan. Gently toss the steak into the queso rice mixture, ensuring it's evenly distributed.
  7. Plate your delicious Steak & Queso Rice hot from the skillet, garnishing with fresh cilantro, dollops of sour cream, and avocado slices for added freshness.
