- Preheat your oven to 375°F (190°C).
- Carefully cut the tops off of each bell pepper and remove the seeds and membranes.
- In a skillet over medium heat, sauté onions and garlic in olive oil for about 5 minutes.
- Add ground beef, breaking it apart, and cook until browned, about 7-10 minutes.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; cook for another 3-4 minutes.
- Stuff each bell pepper with the filling mixture and place in a baking dish.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil, add cheese on top, and bake uncovered for an additional 10-15 minutes.
- Allow to cool for 5 minutes before serving.
