  • 1 lb Ground Beef Lean for a lighter option
  • 1 cup Cooked Rice White or brown rice
  • 1 medium Onion Chopped; shallots can be a substitute
  • 2 cloves Garlic Freshly minced
  • 1 can Diced Tomatoes Canned for convenience
  • 1 tbsp Italian Seasoning Fresh herbs can be swapped
  • to taste Salt
  • to taste Black Pepper
For the Peppers
  • 4 Bell Peppers Any color you love
For the Topping
  • 1 cup Shredded Cheddar Cheese Or your favorite cheese

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the tops off of each bell pepper and remove the seeds and membranes.
  3. In a skillet over medium heat, sauté onions and garlic in olive oil for about 5 minutes.
  4. Add ground beef, breaking it apart, and cook until browned, about 7-10 minutes.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; cook for another 3-4 minutes.
  6. Stuff each bell pepper with the filling mixture and place in a baking dish.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove foil, add cheese on top, and bake uncovered for an additional 10-15 minutes.
  9. Allow to cool for 5 minutes before serving.
