  • 4 cups green cabbage thinly sliced
  • 2 pieces scallions sliced
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon smoked paprika
  • 1 teaspoon coriander
  • 3 tablespoons soy sauce light and dark mix or coconut aminos
  • 1 tablespoon rice vinegar or apple cider vinegar/lime juice
  • 1 tablespoon maple syrup or sugar

Step-by-Step Instructions
  1. In a medium bowl, combine soy sauce, maple syrup, rice vinegar, and sesame oil. Stir well and set aside.
  2. Heat a skillet over medium-high heat and add oil. Sauté scallions and diced bell pepper for about 3 minutes.
  3. Add minced garlic and grated ginger, stirring for another minute until fragrant.
  4. Add crumbled tofu, smoked paprika, and coriander. Stir-fry for 5-7 minutes until lightly golden.
  5. Fold in sliced cabbage and stir-fry for another 3-4 minutes until cabbage wilts but retains some crunch.
  6. Pour the sauce over the mixture and stir for 2-3 minutes, then serve hot.
