  5. Unroll puff pastry on a floured surface and cut into nine 4-inch squares.
  6. Spoon about 2 tablespoons of the egg and bacon mixture onto the pastry squares and fold corners to seal.
  7. Whisk remaining egg with a splash of water for the egg wash, then brush the tops of each pastry.
  8. Bake the bundles in the oven for 15-20 minutes until golden brown, then let cool slightly before serving.
