- In a large mixing bowl, combine grated zucchini, brown sugar, applesauce, eggs, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
- Fold the dry ingredients into the wet mixture until just combined.
