- In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press this crumb mixture firmly into the bottom of a pie dish to form a crust. Set aside to cool.
- In a separate bowl, beat the softened cream cheese and powdered sugar until smooth, then add peppermint extract and green food coloring, mixing until combined.
- Gently fold the whipped cream into the cream cheese mixture using a spatula until you see a silky texture with a light minty hue.
- Spread the cream cheese filling evenly over the prepared crust, drizzle melted chocolate on top, and use a toothpick to swirl it through for a marbled effect.
- Cover with plastic wrap and refrigerate for at least 4 hours until set.
- Once set, top generously with whipped cream, followed by chocolate shavings and sprinkles. Slice and serve immediately.
