Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
  3. Chop mixed vegetables and spread seasoned chicken and vegetables on the sheet pan.
  4. Bake for 20–25 minutes until chicken reaches an internal temperature of 165°F and vegetables are tender.
  5. While baking, whisk together Greek yogurt, ranch seasoning, and fresh herbs.
  6. Warm pitas in the oven for the last 5 minutes of baking.
  7. Let chicken rest for 3-5 minutes before slicing.
  8. Assemble pitas with sliced chicken, roasted vegetables, and dressing.
