  • 4 pieces Boneless, Skinless Chicken Breasts or rotisserie chicken, shredded
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
For the Vegetables
  • 3 cups Mixed Vegetables (bell peppers, onions, zucchini)
For the Herby Ranch
  • 1/2 cup Greek Yogurt or sour cream/dairy-free yogurt
  • 1 tablespoon Ranch Seasoning Mix
  • Fresh Herbs (Parsley, Dill) to taste
For the Pitas
  • 4 pieces Pitas soft or lightly toasted

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken breasts with olive oil, salt, pepper, garlic powder, and paprika. Toss until thoroughly coated.
  3. Arrange the seasoned chicken in the center of a sheet pan and surround with mixed vegetables.
  4. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  5. While baking, mix Greek yogurt, ranch seasoning, and chopped herbs in a small bowl until smooth.
  6. Warm the pitas in the oven for about 5 minutes before serving.
  7. After baking, let chicken rest for 3-5 minutes, then slice and fill pitas with chicken and vegetables. Drizzle with herby ranch.
