Rice
  • 1 cup Jasmine rice or brown rice
Spicy Mayo
  • 1/2 cup Mayonnaise or Greek yogurt
  • 2 tbsp Sriracha adjust to taste
  • 1 tbsp Lime juice fresh
  • 1 tsp Smoked paprika or regular paprika
Seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Salt to taste
  • 1/2 tsp Black pepper
  • 1/4 tsp Cayenne optional
Veggies
  • 1 cup Shredded carrots
  • 1 cup Cucumber sliced
  • 1 Avocado sliced
  • 2 stalks Green onions chopped

Method
 

Preparation
  1. In a medium bowl, combine mayonnaise, sriracha, and fresh lime juice. Mix until smooth and set aside.
  2. Cook rice according to package instructions, fluff with a fork when done.
  3. In a skillet, heat olive oil and cook the shrimp with seasonings until pink and opaque.
  4. Assemble bowls with rice, shrimp, and veggies.
  5. Drizzle spicy mayo over the top and enjoy!
