Step-by-Step Instructions for Sicilian Meatloaf
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, pour in a splash of olive oil and add diced red onion and red bell pepper. Sauté for about 5 minutes until softened.
- Add minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool.
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, eggs, tomato paste, salt, black pepper, and parsley. Stir in the cooled sautéed vegetables.
- Transfer the meat mixture to parchment paper and shape into a rectangle about 8"x15".
- Layer with deli ham, basil leaves, and mozzarella cheese, leaving a border around the edges.
- Roll the meatloaf away from you using the parchment paper. Pinch the ends to seal.
- Place seam-side down on a lined baking sheet.
- Bake for about 1 hour or until the internal temperature reaches 160°F (70°C).
- Let rest for about 10 minutes before slicing and serving over pasta or zucchini noodles with marinara sauce.
