Step-by-Step Instructions for Sicilian Meatloaf
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, pour in a splash of olive oil and add diced red onion and red bell pepper. Sauté for about 5 minutes until softened.
  3. Add minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool.
  4. In a large bowl, combine ground beef, breadcrumbs, Parmesan, eggs, tomato paste, salt, black pepper, and parsley. Stir in the cooled sautéed vegetables.
  5. Transfer the meat mixture to parchment paper and shape into a rectangle about 8"x15".
