Ingredients
  

For the Pasta
  • 8 oz Pasta penne, fusilli, or spaghetti recommended
  • 1 tbsp Kosher Salt for boiling pasta
For the Sauce
  • 1 lb Sausage chicken or plant-based
  • 2 cups Sweet Peppers mixed colors for visual appeal
  • 1 cup Onions yellow or sweet onions preferred
  • 3 cloves Garlic fresh garlic enhances flavor
  • 2 tbsp Tomato Paste or substitute with tomato sauce
  • 1 tbsp Brown Sugar optional for caramelization
  • 1 tsp Oregano or use Italian seasoning
  • 1 tbsp Balsamic Vinegar or substitute with red wine vinegar
For Cooking
  • 2 tbsp Olive Oil extra virgin for best flavor
For Topping (Optional)
  • 1/2 cup Breadcrumbs for added crunch

Method
 

Directions
  1. Heat a large skillet over medium-high heat and add sausage. Cook for 6-8 minutes until browned, then remove and rest.
  2. In the same skillet, add olive oil, onions, and sweet peppers. Cook for 5-7 minutes until caramelized.
  3. Stir in tomato paste, minced garlic, brown sugar, oregano, balsamic vinegar, and kosher salt. Cook for 3-4 minutes until thickened.
  4. Boil salted water in a large pot. Cook pasta for 7-9 minutes until al dente, reserving a cup of pasta water.
  5. Return the sausage to the skillet with the sauce, add drained pasta, and a splash of reserved pasta water. Toss together for 2-3 minutes.
  6. Serve immediately, optionally topped with breadcrumbs.
