Directions
- Heat a large skillet over medium-high heat and add sausage. Cook for 6-8 minutes until browned, then remove and rest.
- In the same skillet, add olive oil, onions, and sweet peppers. Cook for 5-7 minutes until caramelized.
- Stir in tomato paste, minced garlic, brown sugar, oregano, balsamic vinegar, and kosher salt. Cook for 3-4 minutes until thickened.
- Boil salted water in a large pot. Cook pasta for 7-9 minutes until al dente, reserving a cup of pasta water.
- Return the sausage to the skillet with the sauce, add drained pasta, and a splash of reserved pasta water. Toss together for 2-3 minutes.
- Serve immediately, optionally topped with breadcrumbs.
