  • 1/2 cup Vegan Butter Can be replaced with coconut oil
  • 1 cup Milk (Almond or Oat) Substitute with soy milk if needed
  • 1/2 cup Sugar Coconut sugar is a good alternative
  • 1 tbsp Baking Powder Always use fresh
  • 1/2 tsp Baking Soda
  • 1 tsp Vanilla Extract Swap with almond extract for a nutty twist
  • 1 cup Flour Use all-purpose or a gluten-free blend
  • 1 cup Blueberries Fresh or frozen, do not thaw
For the Glaze
  • 1 cup Powdered Sugar Adjust for desired sweetness
  • 2 tbsp Milk (for Glaze) Almond or oat milk works well

Steps
  1. Preheat your oven to 350°F (175°C) and grease the donut molds.
  2. In a large bowl, whisk together the melted vegan butter, almond or oat milk, sugar, baking powder, baking soda, and vanilla extract until frothy.
  3. Gradually add the flour to the wet mixture and fold until just combined.
  4. Gently fold in the blueberries, being cautious to maintain the fluffy texture.
  5. Spoon the batter into the donut molds, filling each cavity about 3/4 full.
  6. Bake for 20 minutes or until golden brown; check with a toothpick.
  7. Cool in the pan for 5 minutes, then glaze with a mixture of powdered sugar and almond milk.
