Preparation Steps
  1. Begin by thinly slicing 1 pound of boneless chicken. Combine with egg white, cornstarch, salt, and pepper. Marinate for 10-15 minutes.
  2. Heat vegetable oil in a large skillet. Fry marinated chicken in batches for 4-5 minutes until golden brown. Transfer to paper towels to drain excess oil.
  3. In the same skillet, add sesame oil, garlic, ginger, and dried chilies. Sauté for 1-2 minutes until fragrant.
  4. Pour in ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Simmer for 2-3 minutes until sauce thickens, adjusting with water if needed.
  5. Add fried chicken to the skillet, tossing to coat in sauce for about 1 minute over medium heat.
  6. Serve on a plate, garnishing with green onions, sesame seeds, and optional fried onion/bell pepper strips.
