  • 1 cup Passata (or Crushed Tomatoes) Can substitute with canned tomatoes.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Garam Masala
For Garnish
  • 1 bunch Fresh Coriander For garnish.
  • optional Fat-Free Natural Yogurt Use dairy-free for a vegan option.

Step‑by‑Step Instructions
  1. Spray a saucepan with low-calorie cooking spray or oil. Sauté chopped onion, garlic, and ginger for 4-5 minutes until onion is translucent.
  2. Add spices (ground cumin, coriander, turmeric, garam masala) to the aromatics and toast for 1-2 minutes.
  3. Stir in chopped carrots, courgette, rinsed lentils, passata (or crushed tomatoes), green chilies, and salt. Mix and bring to a boil.
  4. Once boiling, reduce to simmer, cover, and cook for 45 minutes, stirring occasionally.
  5. Stir in spinach and wilt for 2-3 minutes.
  6. Serve warm, optionally topping with yogurt and coriander.
