Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, cilantro, jalapeño, garlic, ground cumin, chili powder, smoked paprika, salt, and pepper.
  3. Fold in the shredded cheddar cheese and crushed tortilla chips.
  4. Crack an egg into the mixture and combine until smooth.
  5. Scoop tablespoon-sized portions of the mixture and roll them into meatballs.
  6. Heat olive oil in a skillet over medium heat and sear the meatballs for about 5 minutes until they’re golden brown on all sides.
  7. Pour the Mexican-style tomatoes with green chilies around the meatballs in the skillet.
  8. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes.
  9. Let the meatballs rest for a few minutes before serving, garnished with fresh lime wedges.
