- In a large mixing bowl, combine the ground beef, chopped onion, cilantro, jalapeño, garlic, ground cumin, chili powder, smoked paprika, salt, and pepper.
- Fold in the shredded cheddar cheese and crushed tortilla chips.
- Crack an egg into the mixture and combine until smooth.
- Scoop tablespoon-sized portions of the mixture and roll them into meatballs.
- Heat olive oil in a skillet over medium heat and sear the meatballs for about 5 minutes until they’re golden brown on all sides.
- Pour the Mexican-style tomatoes with green chilies around the meatballs in the skillet.
- Transfer the skillet to the preheated oven and bake for 15 to 20 minutes.
- Let the meatballs rest for a few minutes before serving, garnished with fresh lime wedges.
