Step-by-Step Instructions
  1. Marinate the Chicken: Combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Refrigerate for at least 30 minutes.
  2. Prepare the Sauce: In a separate bowl, whisk together soy sauce, honey, rice vinegar, sriracha, and water until smooth.
  3. Cook the Chicken: Heat a skillet, add oil, and sauté marinated chicken until golden and cooked through, about 5–7 minutes.
  4. Sauté the Vegetables: In the same skillet, stir-fry onion, bell peppers, garlic, and ginger for about 5–7 minutes.
  5. Combine Chicken and Sauce: Return chicken to the skillet, pour in the sauce, and simmer for 3–5 minutes until thickened.
  6. Serve and Garnish: Serve hot over rice and garnish with green onions and sesame seeds.
