- In a blender, combine the fresh cilantro, garlic, olive oil, lemon juice, cumin, chili powder, salt, and pepper. Blend on high until smooth.
- Pat the steaks dry with paper towels. Season with salt and pepper. Let them rest at room temperature for a few minutes.
- Preheat the skillet over medium-high heat for about 3–4 minutes. Add olive oil.
- Place the seasoned steaks in the hot skillet and cook for about 3 minutes per side for medium-rare.
- Transfer the steaks to a cutting board and tent with foil. Let them rest for about 5 minutes.
- Slice the steaks against the grain and serve with the spicy cilantro sauce.
