Step-by-Step Instructions
  1. In a mixing bowl, combine golden sandwich cookie crumbs with melted unsalted butter until fully moistened. Press the mixture into the bottom of a 9-inch springform pan and refrigerate to chill for 20 minutes.
  2. Beat the softened cream cheese with granulated sugar and vanilla extract until smooth. In a separate bowl, whip the heavy cream to soft peaks and fold into the cream cheese mixture until light and airy.
  3. Spread the cheesecake filling evenly over the chilled crust and refrigerate for at least 30 minutes to set.
  4. Mix chopped strawberries with gelatin powder and lemon juice. Let sit for 5 to 10 minutes to meld flavors.
  5. Carefully spoon the strawberry mixture over the cheesecake layer and sprinkle crushed cookies on top. Cover with plastic wrap and chill for at least 4 hours or overnight.
  6. Remove the sides of the springform pan, slice, and serve cold. Optionally garnish with fresh strawberry slices.
