  • 4 large Tortillas regular or gluten-free rice paper
Fresh Fruit
  • 1 cup Fresh Strawberries sliced or substitute with blueberries or raspberries
Crunchy Topping
  • 1/2 cup Graham Cracker Crumbs for sprinkling

Method
 

Making the Rolls
  1. Mix cream cheese, whipped cream, and vanilla extract in a large bowl using an electric mixer on medium speed for 2-3 minutes until smooth.
  2. Rinse strawberries under cold water, pat dry, remove tops, and slice into thin pieces.
  3. Spread cheesecake filling on the tortilla, place strawberry slices along one edge, and roll tightly.
  4. Refrigerate the rolls covered with plastic wrap for about 30 minutes.
  5. Slice the chilled rolls into bite-sized pieces, arrange on a platter, and sprinkle graham cracker crumbs if desired.
