- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin using butter or oil spray.
- In a mixing bowl, blend or whisk together the cottage cheese, eggs, flour, baking powder, vanilla extract, and optional maple syrup or honey for 2-3 minutes until smooth and slightly frothy.
- Gently fold in the diced fresh strawberries into your batter.
- Spoon the batter into each muffin cup, filling each about ¾ full.
