Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium saucepan, combine 1 cup of water and ½ cup of unsalted butter over medium heat and stir until the butter melts.
- Bring the mixture to a rolling boil, then quickly add 1 cup of all-purpose flour and ¼ teaspoon of salt.
- Stir vigorously until the mixture forms a cohesive ball.
- Let the dough cool for 5 minutes, then mix in 4 large eggs one at a time until smooth.
- Spoon or pipe the dough into squares on the baking sheet, spaced 2 inches apart.
- Bake for 25 minutes until golden brown and puffed.
- Whip together 1 cup of heavy cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
- Cut cooled pastry squares in half, fill with whipped cream, and top with sliced strawberries.
- Replace the tops and dust with powdered sugar if desired, then serve.
