- Wash the fresh strawberries, mint leaves, and lemon under cold running water. Pat them dry and slice them.
- Combine half of the sliced strawberries and mint leaves in a bowl with simple syrup. Muddle gently.
- Strain the muddled mixture into a large pitcher using a fine mesh sieve.
- Pour in the white grape juice and lemon juice into the pitcher, stirring gently.
- Add the remaining sliced strawberries, lemon rounds, and mint leaves into the pitcher.
- Cover the pitcher and chill in the refrigerator for 15 to 30 minutes.
- Add sparkling water just before serving and stir gently.
- Fill glasses with ice and pour the sangria over the ice. Garnish with extra fruit and mint.
