Salad

  • ½ cup Pecans can substitute with almonds or walnuts
  • ½ cup Feta Cheese can substitute with goat cheese
  • 1 cup Sliced Strawberries can substitute with any seasonal berry

Method
 

Preparation
  1. Gather all ingredients for the salad: lettuce, chicken, pecans, feta, and strawberries.
  2. In a blender, combine balsamic vinegar, maple syrup, and Dijon mustard. Blend on low speed while gradually adding olive oil.
  3. In a large mixing bowl, add spring mix or romaine lettuce and toss gently.
  4. Shred or chop the cooked chicken and add to the bowl along with pecans and feta.
  5. Slice fresh strawberries and gently fold them into the salad mix.
  6. Drizzle the dressing over the salad just before serving and toss gently.
  7. Serve immediately in bowls or plates for the best freshness.
