Cooking Steps
- Rinse 1 cup of white rice under cold water. In a medium saucepan, combine the rice with 2 cups of water or broth and salt. Bring to boil, then simmer for 18-20 minutes until fluffy.
- Heat a large skillet over medium heat, add 1 tablespoon of olive oil. Cook 1 pound of ground beef/turkey for 5-7 minutes until browned.
- In a separate pot, heat 1 can of drained black beans with half a teaspoon of cumin for 5-7 minutes until warmed.
- In the same skillet, cook chopped onion and bell peppers for 3-4 minutes until softened.
- Assemble the bowl with rice, ground meat, black beans, lettuce, diced tomatoes, and cheddar cheese.
- Garnish with avocado slices and fresh lime juice. Serve warm in individual bowls.
