Ingredients
  

For the Base
  • 1 cup White Rice Rinse under cold water for extra fluffiness
  • 2 cups Water/Chicken Broth Use chicken broth for more flavor
For the Protein
  • 1 pound Ground Beef/Turkey Choose beef or turkey based on preference
  • 1 packet Taco Seasoning About 1 oz. ensures perfect seasoning
For the Filling
  • 1 can (15 oz) Black Beans Drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Diced Tomatoes Fresh or canned
For the Crunch
  • 1 cup Shredded Lettuce
  • 1 cup Shredded Cheddar Cheese
For the Topping
  • 1 cup Salsa Choose favorite type
  • 1 tablespoon Olive Oil For cooking the meat
  • to taste Salt and Pepper Season to taste
For Garnish (Optional)
  • 1/4 cup Fresh Cilantro Chopped finely
  • 2 wedges Lime Squeeze for a zesty kick

Method
 

Cooking Steps
  1. Rinse 1 cup of white rice under cold water. In a medium saucepan, combine the rice with 2 cups of water or broth and salt. Bring to boil, then simmer for 18-20 minutes until fluffy.
  2. Heat a large skillet over medium heat, add 1 tablespoon of olive oil. Cook 1 pound of ground beef/turkey for 5-7 minutes until browned.
  3. In a separate pot, heat 1 can of drained black beans with half a teaspoon of cumin for 5-7 minutes until warmed.
  4. In the same skillet, cook chopped onion and bell peppers for 3-4 minutes until softened.
  5. Assemble the bowl with rice, ground meat, black beans, lettuce, diced tomatoes, and cheddar cheese.
  6. Garnish with avocado slices and fresh lime juice. Serve warm in individual bowls.
