  • 4 cups ripe vine tomatoes
  • 2 cups Persian or English cucumbers
  • 1 cup red onions or substitute with green onions
  • 2 cloves fresh garlic
For the Vinaigrette
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 teaspoon dried oregano or use dill or basil
  • 1 teaspoon honey or replace with maple syrup for vegan option

Method
 

Preparation Steps
  1. In a large mixing bowl, combine quartered ripe vine tomatoes, sliced cucumbers, and chopped red onions. Toss in freshly chopped parsley and cilantro. Season with salt and pepper. Mix until well combined.
  2. In a separate bowl, whisk together olive oil and red wine vinegar. Add minced garlic, salt, pepper, oregano, and honey. Whisk until emulsified.
  3. Drizzle the vinaigrette over the salad and toss gently until evenly coated.
  4. Cover and let the salad marinate at room temperature for about 1 to 3 hours.
  5. Once marinated, toss gently again and adjust seasoning if needed. Serve in a bowl, garnishing with additional herbs if desired.
