- If your shrimp are frozen, thaw them under cold running water for about 5-10 minutes. Once defrosted, pat them dry and set aside.
- In a large pot, bring salted water to a boil. Add spaghetti and cook until al dente, approximately 8-10 minutes. Reserve a cup of pasta water and drain the pasta.
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until golden.
- Add the shrimp to the skillet, cook for 2-3 minutes until pink and opaque. Then add grape tomatoes and simmer for another 2-3 minutes.
- Stir in fresh spinach and cook for 1-2 minutes until wilted.
- Gently fold in drained spaghetti, adding reserved pasta water if needed for a silky consistency.
- Remove from heat, plate, and garnish with Parmesan cheese and red pepper flakes as desired.
