Step-by-Step Instructions
  1. Prepare the Fruit Medley by washing and quartering fresh strawberries, draining canned mandarin oranges and pineapple chunks, peeling and slicing the kiwi, and cubing ripe mangoes. Combine all the fruits in a large mixing bowl and set aside.
  2. In another bowl, beat the softened cream cheese with a hand mixer until smooth and free of lumps, about 1-2 minutes.
  3. Add the pudding mix and French vanilla coffee creamer to the cream cheese, mixing initially at low speed then increasing to medium-high for about 3-4 minutes until thick and creamy.
  4. Gently fold the cheesecake mixture into the prepared fruit medley until each piece of fruit is well coated.
  5. Cover the bowl and refrigerate for at least 4 hours to allow flavors to blend and the salad to set.
