Step-by-Step Instructions
- Prepare Cookie Dough: In a large mixing bowl, cream together 1 cup of peanut butter, 1/2 cup of softened butter, 1/2 cup of granulated sugar, and 1/2 cup of brown sugar until smooth. Add in 1 egg and mix well. Gradually stir in 1 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt.
- Shape Cookies: Portion dough onto a lined baking sheet, spacing them 2 inches apart. Flatten each dough ball with your fingers or fork.
- Bake: Preheat your oven to 350°F (175°C). Bake cookies for 10-12 minutes, or until edges are golden. Cool completely on a wire rack.
- Assemble Sandwiches: Take a scoop of ice cream and place it on the flat side of half of your cookies. Sandwich with remaining cookies and press gently.
- Coat: Melt 1 cup of milk chocolate in a microwave-safe bowl and dip each sandwich, coating fully. Roll edges in crushed peanuts.
- Freeze: Place sandwiches on a parchment-lined sheet and freeze for at least 1 hour.
