Step‑by‑Step Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch metal baking pan by lining it with parchment paper.
- In a mixing bowl, combine all-purpose flour, light brown sugar, ground cinnamon, and a pinch of salt. Blend in the salted butter until crumbly and refrigerate.
- Mash 2-3 very ripe bananas until smooth and stir in granulated sugar, light brown sugar, eggs, melted butter, sour cream, and vanilla.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Fold into the banana mixture and add chocolate chips.
- Spread the batter into the prepared pan, top with crumble, and bake for 38-42 minutes or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 30 minutes. Prepare the glaze by whisking powdered sugar, espresso powder, and milk.
- Lift the cake out of the pan, drizzle the glaze over the top, slice, and serve warm or at room temperature.

Notes
For best results, use very ripe bananas, avoid over-mixing the batter, and store properly to maintain freshness.
