Method
 

Step-by-Step Instructions for Veggie Fruit Snacks
  1. Wash 1 cup of strawberries and 1 cup of blueberries, then remove the tops from the strawberries. Blend with 1 cup of spinach and 1 grated carrot until smooth.
  2. Pour the mixture into a saucepan over medium heat. Add 1 cup of applesauce, 2 tablespoons of honey or maple syrup, lemon juice, and vanilla. Stir and heat for 3-5 minutes.
  3. Sprinkle 2 tablespoons of gelatin over the warm mixture and let it rest for 1 minute. Stir gently during this time.
  4. Stir continuously over medium heat until gelatin fully dissolves, about 2-3 minutes.
  5. Remove from heat, cool for about 5 minutes, and pour into molds or a baking pan. Use a spatula to spread evenly.
  6. Refrigerate for at least 2 hours until firm.
  7. Carefully remove from molds or cut into squares. Store in an airtight container in the fridge.
