- Rinse lentils under cold water, combine with water in a pot, add bay leaf and kombu. Boil then simmer for 20 minutes until tender. Drain and discard bay leaf and kombu.
- Heat olive oil in a large pan. Sauté sliced onion for 2-3 minutes until translucent.
- Stir in chopped Swiss chard, cook for 1 minute until wilted.
- Add spiralized sweet potatoes, sauté for 3 minutes, then mix in red cabbage and cook for another minute.
- Combine cooked lentils with the mixture in the pan, and transfer to a serving bowl.
- Top with toasted pine nuts and chopped herbs, drizzle with Dijon vinaigrette, and toss to combine.

Use kitchen scissors for long sweet potato noodles for a more manageable size. Store leftovers in the fridge for 3-5 days and reheat as needed.
