Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing it lightly.
  2. Melt 1 cup of butter until clear and smooth, then transfer to a mixing bowl to cool slightly.
  3. Whisk in 2 cups of granulated sugar into the melted butter until smooth and glossy.
  4. Add 4 large eggs one at a time, mixing thoroughly after each addition, then stir in 2 teaspoons of vanilla extract.
  5. In a separate bowl, whisk together 1 cup of all-purpose flour, ¾ cup of cocoa powder, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  6. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  7. Pour the brownie batter into your prepared baking pan and bake for 25-30 minutes.
  8. Allow the brownies to cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
  9. Slice the brownies into 2-inch squares to prepare for assembling the sandwiches.
  10. Take one brownie square, add a scoop of ice cream on top, then place another brownie square to create a sandwich.
  11. Serve immediately or wrap in plastic wrap and freeze for up to three months.
